Salsa de Tomate Casero (Home-style Tomato Sauce) is a traditional Gibraltarian recipe for a classic home-style tomato sauce with bell pepper and garlic flavoured with oregano and basil. This is a classic Spanish tomato sauce that's also a part of the cuisine of Gibraltar.
Ingredients:
2kg crushed tomatoes or 2 kg ripe tomatoes, peeled, cored de-seeded and chopped
1 onion, finely chopped
2 garlic cloves, finely chopped
1 green bell pepper, finely chopped
1 tbsp sweet paprika
pinch of sugar
Died oregano and/or fresh basil
salt and freshly-ground black pepper, to taste
olive oil
Method:
Set a large saucepan or stockpot over low heat. Add a splash of oil and when hot use to fry the onion, bell pepper for about 10 minutes, stirring occasionally.
When the onion is soft and translucent add in the crushed or chopped tomatoes. Continue cooking for about 20 minutes, until the tomatoes have started to break down into a sauce.
Season to taste with dried oregano and/or fresh basil then reduce to a gentle simmer, cover with a tight-fitting lid and continue cooking for 60 minutes.
When the tomatoes have fully broken down and the sauce has thickened somewhat add the paprika and salt then adjust the seasonings to taste.
Process with a stick blender to a smooth purée then take off the heat and set aside to cool. Use in any recipe that calls for tomato sauce.
