Arroz com Mariscos (Rice with Shellfish) is a traditional Mozambican recipe for a classic dish of rice with peas, pork and sausages that's served topped with bell peppers and shellfish. Ingredients:
500g rice
3 red bell peppers, sliced into thin strips
500g peas
600g lean pork, cubed
1 large onion, thinly sliced
1kg mussels and/or clams, scrubbed
12 crayfish
3 slices of bacon, chopped
12 tbsp olive oil
250ml dry white wine
salt and freshly-ground black pepper, to taste
12 slices of chouriço (or Spanish chorizo) sausage
Method:
Add 750ml water to a pan, season with salt and black pepper and bring to a boil.
Add 5 tbsp of the olive oil to a pan, when hot, add the dry rice (do not wash) and fry until it is coated by the oil and becomes transparent. Pour the boiling, seasoned, water over the rice, bring to a boil, reduce to a simmer, cover the pot and cook for 20 minutes, or until the rice is tender.
In another pot, add 5 tbsp oil. When hot, stir in the pork and onions and fry until browned. Drizzle over the white wine, season to taste with salt and black pepper, bring to a simmer and cook gently, covered, for 80 minutes.
Quickly fry the bacon and chouriço until browned then mix the meat, sausage, bacon and all the other ingredients into the pan withe the rice. Add 200ml water to a pan, bring to a boil, add the langoustines and cook for 5 minutes. Add the mussels or clams to the pot and cook for 5 minutes more, or until opened. Drain and set aside.
Arrange the rice on a serving dish, garnish with a wheel formed from the bell pepper strips. Sit the langoustines and shellfish on top and serve.
