Aliter Coliclos II (from Apicius' De Re Coquinaria) III, ix, 3


Aliter: coliculi elixati in patina compositi condiuntur liquamine, oleo, mero, cumino. piper asparges, porrum, cuminum, coriandrum viridem super concides.

Translation


Another Way: Boiled stalks are placed in a pan, [and moistened] with stock, oil, unmixed wine, and cumin. Sprinkle with pepper and chop chives, cumin, coriander leaves over it.

Modern Redaction

Method:

Combine the vegetable stock, wine, olive oil and cumin in a pan. Add the cabbage and sprouting broccoli, bring to a simmer, cover and cook for about 10 minutes, or until the greens are just tender.

Turn the cooked greens into a serving dish and garnish with the black pepper, chives, ground cumin and coriander leaves.
