Aliter Coliclos I (Sprouts, Another Way, I) is a traditional Ancient Roman recipe for a classic dish of boiled cabbage or stalks (eg sprouting broccoli) served in a wine and cumin sauce. Translation
Another Way: Cut boiled broccoli or cabbage sprouts in half and mix the most tender leaves with coriander, onion, cumin, pepper, passum or caroenum, and a little olive oil.
Modern Redaction
The term 'coliclos' literally means broccoli or cabbage sprouts, so the most appropriate ingredient here would be sprouting broccoli.
Ingredients:
300g sprouting broccoli or young cabbage sprouts, parboiled until just tender
Add the broccoli or cabbage leaves to a pan of boiling, lightly-salted water and cook for about 12 minutes, or until just tender. Drain and set aside.
In the meantime, combine the wine, olive oil, coriander, onion, cumin and black pepper in a small pan. Cut the greens into bite-sized pieces, add to the sauce then bring to a boil and serve.
