Carrots, Another Way: Serve with salt, pure olive oil and vinegar.

Modern Redaction

Ingredients:

6 carrots, scraped and sliced
1/4 tsp sea salt
4 tbsp olive oil
2 tbsp red wine vinegar

Method:

Add the carrots to a pan, cover with water, bring to a boil then reduce to a simmer, cover the pan and cook for about 10 minutes, or until tender. Once done, drain the parsnips.

Add the parsnips to a pan with the olive oil, red wine vinegar and salt and heat through. Serve hot.
