Tofu and Vegetable Stir-fry: An Australian recipe for a vegetarian stir-fry of mixed vegetables and mushrooms in a white wine and vegetable stock base.
Ingredients:
350g cauliflower florets, chopped
350g broccoli florets, chopped
250g asparagus spears, sliced into 2cm lengths
350g green (French) beans, sliced into 2cm lengths
3 medium carrots, sliced into batons (fries)
4 tbsp olive oil
2 garlic cloves, crushed
1 tbsp fresh thyme, chopped
1 tsp cracked black peppercorns
375g firm tofu, drained and cubed
2 medium onions, sliced
250g button mushrooms, sliced
125ml dry white wine
1 vegetable stock cube
3 tbsp cornflour (cornstarch)
250ml water
4 tbsp freshly-grated Parmesan cheese
Method:
Bring a large pan of water to a boil. Add the broccoli, asparagus, cauliflower, beans and carrots and boil for 2 minutes. Drain, rinse under plenty of cold, running, water and set aside.
Heat the oil in a wok. When hot, add the garlic, thyme, black peppercorns and tofu. Stir-fry for about 3 minutes, or until lightly browned then remove with a slotted spoon and set aside.
Add the onions and mushrooms to the oil remaining in the wok and stir-fry for about 5 minutes or until the onions are soft but not coloured.
Stir in the parboiled vegetables, along with the white wine. Bring to a boil then crumble in the vegetable stock cube. Blend the cornflour with the water until smooth and pour into the wok.
Bring mixture to a boil and cook for about 5 minutes, or until thickened then add the tofu mixture. Allow to heat through and turn into a warmed serving dish.
Sprinkle over the grated Parmesan cheese and serve immediately.
