Texas is the home of chili and this dish originated in Texas. However, unlike the standard chili con carne which has become an international dish true Texas chili contains no beans (though beans can be served on the side as an accompaniment).
Heat a large oven proof casserole that's been lightly oiled over medium high heat. Add half the beef to this, season and cook until brown. Set the beef aside then cook the remaining beef, seasoning again.
Add the 350g onion to the pan then fry for 5 minutes, or until lightly browned before adding the cumin, chillies and garlic. Fry for 1 minute then add he wine and return the beef to the pan. Cook for 5 minutes then stir-in the vinegar, chilli powder, oregano and beef. Bring the mixture to a boil then reduce to a simmer, cover the pan and cook for about 90 minutes, or until the beef is tender, stirring occasionally.
Uncover the pot and continue simmering for 60 minutes, stirring occasionally. Now add the coriander and stir to combine. Serve hot in bowls, garnished with onion and sour cream.
