Ingredients:

500g orzo (known as lisan 'asfur in Egypt [literally 'swallows' tongues']
500g beef, diced
2 onions, sliced very thinly
2 green bell peppers, thinly sliced
1 tsp ground cinnamon
500ml meat stock
1 tbsp butter
1 tbsp oil
salt and black pepper, to taste

Method:

Combine the oil and butter in a pan and cook on medium heat until the butter has melted then add the onion and green bell peppers. Fry for 2 minutes before adding the meat. continue frying until the meat releases its juices then season to taste. Fry again until the meat juices have evaporated then stir-in the beef stock and the cinnamon.

Bring to a boil, reduce to a simmer and cook for 15 minutes. Remove the meat and vegetables with a slotted spoon and transfer to a tagine or flame-proof casserole. Bring the stock back to a boil and add the orzo then cook for 6 minutes to reduce before pouring over the contents of the casserole. Cover the pot and place in an oven pre-heated to 180°C. Bake for about 30 minutes then serve hot garnished with parsley.
