Ingredients:
800g cooked beans (any beans work and tinned are fine)
3 large onions, chopped
3 garlic cloves, chopped
450g smoked pork, cubed
2 large potatoes, peeled and chopped
4 large carrots, chopped
1 medium parsley root, chopped
2 medium red chillies, chopped
2 tbsp olive oil
225g smoked sausage, sliced
1.25l chicken stock
Method:
Heat the oil in a large flame-proof casserole then use to fry the potatoes, onions, garlic, parsley root and chillies for 10 minutes. Add the pork and sausage and fry the mixture, stirring frequently, for a further 10 minutes.
Add the stock, bring to a simmer then cover and cook for 15 minutes. Now add the beans and cook, uncovered, for a further 5 minutes. Serve ladled into warm bowls with plenty of crusty bread.
