Ingredients:
4 medium tomatoes, blanched, peeled and chopped
1 garlic clove, crushed
1 tbsp tomato purée
salt, to taste
oil for frying
chilli, sliced into rings, to garnis
Method:
Heat a little oil in a pan, add the tomatoes, garlic and tomato purée and mix thoroughly to combine. Season with a little salt then bring to a simmer and cook for about 20 minutes, or until the tomatoes have broken down to a sauce.
Serve hot, garnished with sliced chillies, as an accompaniment to rice dishes.
