Riyenu (Chamorro Stuffing) is a traditional Guam recipe for a classic accompaniment made from a blend of potatoes, minced beef, onion, turkey stuffing mix, pimento, black olives and raisins cooked in evaporated milk that's an excellent accompaniment to any festive meal. Ingredients:
2 medium potatoes, peeled and cut the potatoes into 5mm cubes
250ml vegetable oil, for frying
500g minced beef
1 small onion, diced
1 box Stove Top Stuffing Mix for Turkey
2 small jars diced pimento, drained
1 small tin chopped black olives, drained
90g raisins
1 tin evaporated milk
50g unsalted butter, melted
Salt and freshly-ground black pepper, to taste
Method:
Place a shallow frying pan over medium heat. Add the vegetable oil and use to fry the cubed potatoes, in batches, until golden brown and just cooked through.
Remove the cooked potatoes with a slotted spoon and drain on kitchen paper then set aside. Add in the onions and fry for about 6 minutes until starting to brown around the edges. Remove with a slotted spoon and set aside.
Add the minced beef to the pan, stirring with a wooden spatula and breaking any clumps until the meat is no longer pink.
Add in the contents of the stuffing mix box, then return the cooked potatoes and onions to the pan. Stir to combine then cook over medium heat for a few minutes, stirring occasionally. At this point stir in the pimentos and olives.
Continue to cook over medium heat for a minute or so, stirring occasionally.
Add the raisins. then pour over the evaporated milk. Bring to a simmer then add the melted butter.
Continue cooking for a further minute or two. Taste the mixture then season with salt and black pepper.
Transfer the stuffing mixture to a greased oven-proof baking dish.
Transfer to the centre of an oven pre-heated to 180C and bake for 20 minutes.
Serve hot as an accompaniment alongside smoked or barbecued meat.
