The pua'atoro in this recipe is local Tahitian corned beef; an ingredient that originally came from Australia, as did this recipe, which is effectively a hash, but made with a little French flair.

Ingredients:

1 tin of PunuPua'atoro (corned beef)
2 potatoes, peeled and diced
1 onion, finely chopped
1 tomato, diced
2 spring onions, finely sliced
100ml water
salt and freshly-ground black pepper, to taste

Method:

Dry the potato pieces with a kitchen towel.

Place a deep frying pan or wok over high heat. Add a little oil and add the potatoes. Season lightly with salt then stir-fry for about 10 minutes, or until cooked through and golden brown. Remove with a slotted spoon and set aside.

Drain any excess oil from the pan then use the remaining oil to sweat down the onion over low heat until soft and golden (about 12 minutes).

Shred the corned beef then add to the pan along with the diced tomato. Stir to combine and continue cooking for 5 minutes.

Return the potatoes to the pan and if the mixture looks a little dry add some of the water.

Stir-fry for about 90 seconds until everything is well combined and heated through.

Transfer to a warmed serving dish, garnish with the spring onion and serve.
