Ingredients:

1 tbsp olive oil
1 medium onion, chopped
2 large carrots, sliced lengthways and and each half cut into 3mm lengths
2 bayleaves
2 sprigs fresh thyme
1 tsp fresh winter savory
1.5l water (or vegetable stock)
200g green lentils
75g red lentils
1 medium potato, peeled and cut into 1cm pieces
sea salt and freshly-ground black pepper, to taste
4 tbsp freshly-grated Parmesan cheese (optional)

Method:

Heat the oil in your pressure cooker. Add the onion and fry over medium heat for about 2 minutes, or until soft. Now add the carrot pieces. Stir to combine and fry for 1 minute before adding the herbs. Pour over the water (or stock) then stir in the lentils and potatoes.

Add the lid and lock in place then bring to pressure over high heat. Reduce the heat to medium (to stabilize the pressure) and cook for 6 minutes.

Take off the heat and allow the pressure to reduce naturally. Remove the lid and take out the bayleaves and thyme stems. Season to taste with salt and black pepper. Ladle the soup into four warmed bowls, top with the Parmesan cheese (if using) and serve.
