Pressure Cooker Baked Beans is a modern American recipe for a classic baked bean mix made from haricot beans, onions, bacon, mustard powder and molasses that's cooked in a pressure cooker and finished in the oven. Place the beans in a large bowl, cover with plenty of water and set aside over night to soak.
The following day, drain the beans and place in your pressure cooker with all the other ingredients. Pour in just enough water to cover the beans then lock the pressure cooker's lid and bring up to 5 lb pressure. Cook for 45 minutes then release the pressure.
Turn the bean mixture into an oven-proof dish. Place in an oven pre-heated to 160°C and cook, uncovered for about 60 minutes or until the beans are browned and tender (add more water as needed).
Allow to cool and store in the refrigerator over night. Re-heat the following day before serving (this will intensify the flavours).
