Poulet à la N'Gatietro (Chicken in the Manner of N'Gatietro) is a traditional Ivorian (from Côte d'Ivorie) recipe for a classic dish of chicken stewed in a tomato-based sauce flavoured with onions and chillies that's thickened with the addition of peanut butter. Peanuts are a classic ingredient in many West African stews, where they are used primarily as a thickener in the form of peanut paste or peanut butter. However, peanuts are originally from South American where the Aztecs called them thalcacahuate and the Incas of Peru called them anchic. It was the Portuguese who first brought peanuts to West Africa and it is here that they made the most strong impression on the continent. In a twist of fate and history, African slaves then brought peanuts to the United States where their name for this pea, nguba became Anglicized to goober. The following is a classic peanut-based recipe from Côte d'Ivoire.

Ingredients:

1 1.8kg chicken, cut into serving pieces
2 tbsp vegetable oil
2 shallots, chopped
1 large onion, chopped
2 large tomatoes, diced
2 tsp tomato purée
950ml water
250ml natural smooth peanut butter (unsweetened)
1 tsp crushed chillies (preferably piri-piri), or to taste
1 bay leaf
1/2 tsp salt (more if unsalted peanut butter is used)

Method:

Heat oil in a large frying pan, Dutch oven or metal casserole dish. Add the chicken pieces and brown them on all sides. When nicely coloured add the shallots, onions, tomato paste and cook for 5 minutes. Add 800ml water and bring to a boil. Reduce to a simmer, cover and cook on low heat for 10 minutes.

Meanwhile, add the final 150ml water to the peanut butter a little at a time and stir to combine. Now add the thinned peanut butter to the pot along with the chillies, bay leaf and salt. Mix to combine the liquids then cover and allow to simmer for 35 minutes. Taste for seasoning and serve immediately over a bed of rice.

Serve hot on a bed of rice.
