Coconut Crab Curry is a traditional Pitcairn Islands recipe for a curry of coconut crab that's briefly fried and finished in coconut milk flavoured with Polynesian curry powder. The full recipe is presented here and I hope you enjoy this classic Pitcairn Islands version of: Coconut Crab Curry.
Heat oil in a deep frying pan or wok over medium heat. Scatter over the onion, garlic and ginger and fry until soft (about 3 minutes). Scatter over the curry powder and stir-fry for 90 seconds until aromatic.
Add the crab and fry brief. Pour over the coconut milk, bring to a simmer and cook for about 20 minutes, until the crab is cooked.
