Nalot is a rustic, filling dish made from pounded taro, yam, and/or cassava (green bananas can also be used) mixed with coconut milk.

Think of it as Vanuatu’s answer to mashed potatoes—but way more exciting.
Ingredients:

200g boiled taro
100g boiled yam
100g boiled cassava

250ml coconut milk
Salt, to taste

Method:

Boil your choice of root vegetables (or a blend) until tender.

Drain and whilst still hot mash until smooth.

Beat in the coconut milk and salt.

Serve warm as an accompaniment. If desired you can garnish with oil and a blend of seeds and spices.

It's an excellent accompaniment to barbecued or roast fish or meat.
