Oshi Palov (Beef and Vegetable Pilau) is a traditional Tajik (from Tajikistan) recipe (also known as 'osh') for a classic pilau of rice, beef and mixed vegetables that is one of the country's national dishes and which is served topped with halved hard-boiled eggs. Palov employs vegetables, rice, meat and spices, and there are up to 200 varieties. The importance of this dish for the Tajik communities is summarized in the popular saying: “If you eat Oshi Palov at someone’s house, you have to respect him/her for 40 years". Groups of men or women prepare it either in their home or in the tea houses, while they socialize, play music or sing. The knowledge bound to the practice is handed down from generation to generation in families and cooking schools. Also known as 'osh' this is one of Tajikistan's national dishes and is known as 'The King of Meals'.
Ingredients:
400g Jasmine Rice
8 tbsp cooking oil
300g beef, diced
1 onion, peeled and sliced
4 carrots, scraped and chopped
4 eggs
2 quinces (or 2 potatoes), peeled and quartered (core the quinces)
2 garlic cloves (do not peel)
water
salt, to taste
Method:
Place the rice in a sieve or fine-holed colander and wash under running water until the water runs clear. Set aside to drain.
Heat the oil in a pan, add the meat and fry until nicely coloured all over. Add in the onion slices, carrot pieces, unpeeled garlic and quince or potato quarters.
Cover the pot and cook for about 25 minutes; remove the garlic and the quinces (or potatoes) from the pan. Pour the rice in the pan and add salted hot water until it’s covered, then cover the pan again and cook for further 5 minutes.
It’s important not to stir the dish whilst the rice is cooking. In the meantime, boil the eggs in another pan.
When the dish is cooked (about 15 minutes), add the potatoes (or quinces) and salt, if needed. Stir carefully. Serve the rice with meat and eggs.
