This recipe comes from Germany and these fritters are just the thing if you have had a heavy night out on the town.

New Year's Eve Latkes: A German recipe for a vegetarian fritter of grated potatoes and onions bound with flour that are typically served on New Year's Eve accompanied by sour cream.

Ingredients:

6 large potatoes, peeled and finely grated
1 tsp baking powder
1 onion, finely grated
plain flour, as needed
salt and freshly-ground black pepper, to taste
125ml sour cream or crème fraîche, to garnish

oil, for frying

Method:

Mix together the grated potatoes and onion in a bowl (they should be grated so finely that you have a mush). Turn the onion and potato mix into a fine-meshed sieve and set over a bowl then squeeze out as much of the excess liquid as you can.

Turn the squeezed mixture into a bowl then sprinkle over the baking powder. Mix well to combine then sprinkle over a tablespoonful of flour. Mix this into the vegetables then scatter over another tablespoon of flour and mix to combine. Continue in this manner until the mixture is firm enough for you to be able to shape into patties (in terms of flavour and texture, the less flour you add, the better).

Heat a deep frying pan or skillet over medium-high heat. Add about 6 tbsp oil (enough to cat the base of the pan) and when hot form the potato mix into thin patties (About 6cm in diameter). Add to the hot oil and fry, a few at a time, until golden brown on the base. Turn over and cook until browned on the other side.

Remove and drain on kitchen paper as you add a little more oil to the pan and fry the next batch of patties.


Arrange on a serving plate and season to taste with salt and black pepper.

Serve warm, garnished with dollops of sour cream or crème fraîche and accompanied by more sour cream and slivers of smoked salmon.
