Mullah Bamyah (Beef and Okra Stew)

Ingredients:

900g small okra
450g minced beef
1 tbsp Berbere spice
5 garlic cloves
500ml passata (tomato juice)
oil for cooking
salt and freshly-ground black pepper

Method:

Heat oil in a pan and lightly fry the okra take out of the pan and set aside. Crush the garlic with the salt in a mortar. Add to the pan along with the beef and the Berbere spice. Fry for a few minutes, or until the beef begins to colour then take off the heat.

Arrange two layers of okra in the base of a stewing pot. Top with the mince then add a layer of okra on top. Season the passata with salt and black pepper then pour over the contents of the pan. Bring to a simmer and cook over low heat until all the liquid has been absorbed. Turn into a serving dish and serve with bread and/or rice.
