Microwave Spicy Mid-winter Pie: A British recipe for a stew of beef, onions, turnip, celery and carrots in a beef base that's cooked in a microwave, topped with puff pastry and finished by browning under a grill.

Ingredients:

3 tbsp oil
2 tbsp plain flour
1 tbsp mustard powder
2 tsp salt
1/2 tsp freshly-ground black pepper
1.3kg stewing steak, cut into 3cm cubes
10 baby onions, peeled
1 small turnip, peeled and diced
4 celery sticks, diced
6 carrots, scraped and sliced
2 tsp dried mixed herbs
300ml beef stock (hot)
1/4 tsp Worcestershire sauce
350g puff pastry (thawed if frozen)
1 egg, beaten, to glaze

Method:

Combine the oil, flour, mustard powder, salt and black pepper in a deep, microwave-safe dish. Place in your microwave (1200W) and cook on full power for 90 seconds, or until the mixture is beige in colour. Add the beef and stir to combine, place back in your microwave and cook on full power for 3 minutes. Now add the onions, turnip, celery, carrots, herbs, stock and worcestershire sauce. Stir well then cover with clingfilm. Snip two steam holes in the top then place in your microwave and cook on 30% (low) power for 20 minutes. stirring occasionally.

Remove from the microwave and turn into a large pie dish. Place the pastry on a lightly-floured work surface and roll out until large enough to form a lid about 3cm larger than your dish. Brush the edges of the pie dish with the beaten egg then sit the pastry on top. Fold the edges over to form a double thickness around the rim. Flute the edges then make three incisions in the top of the crust to allow steam to escape.

Take any scraps, roll them out and cut into decorative leaf shapes. Brush the top of the pie with the beaten egg then place in your microwave (1200W) and cook no full power for 4 to 5 minutes, or until the pastry puffs up and is cooked through.

Remove from the microwave and place under a hot grill (broiler) so that the top of the pastry browns. Serve hot.
