Microwave Jambalaya: A British recipe (based on a classic American Cajun original) for a classic stew of ham, vegetables and prawns in a tomato base that's served on a bed of rice and which is cooked in the microwave.
Ingredients:
500g cooked ham, cubed
1 green bell pepper, de-seeded and chopped
1 small onion, peeled and chopped
1 garlic clove, finely chopped
2 tbsp butter
300ml condensed tomato soup
4 tbsp hot water
100g peeled prawns
1 dried
bayleaf, crumbled
pinch of dried
oregano
salt and freshly-ground
black pepper, to taste
175g
steamed long-grain rice
Method:
Combine the ham, bell pepper, onion, garlic and butter in a 2l glass or ceramic casserole dish. Cover with a vented microwave-safe lid (or use clingfilm [plastic wrap] with a hole poked in the centre). Place in your microwave (1200W) and cook on high power for about 4 minutes, or until the onion and pepper are both soft.
At this point stir in the soup, water, prawns, bayleaf and oregano then season to taste. Re-cover the dish then place back in the microwave and cook for 2 minutes more. Stir in the rice then cook for a further 3 minutes, or until the mixture is bubbling hot.
Allow to cool for 2 minutes then serve.
