Microwave Curried Bean and Apple Soup

Ingredients:

30g butter
1 onion, peeled and chopped
500g cooking apples, peeled, cored and chopped
200g cooked beans (tinned is fine)
3 tbsp curry paste (or to taste)
4 tbsp sultanas
600ml chicken stock, boiling
salt and freshly-ground black pepper, to taste
1 dessert apple, cored and thinly sliced, to garnish

Method:

Combine the chicken stock, sultanas and curry paste in a bowl. Whisk to combine and set aside.

Place the butter in a large microwave-safe bowl, place in your microwave (1200W) and heat for 30 seconds to melt. Add the cooking apples, 3/4 of the beans and the stock mixture. Cover with a vented microwave-safe lid (or use clingfilm [plastic wrap] with a hole poked in the centre). Place in your microwave (1200W) and cook on high power for about 3 1/2 minutes, or until piping hot.

Allow the mixture to cool slightly then purée in a blender until smooth. Add the reserved beans to the soup and adjust the seasonings to taste. Return to the microwave and cook for 1 minute to re-heat.

Divide between four warmed soup bowls, garnish with the dessert apple slices and serve.
