Microwave Beef Spice Hotpot: A British recipe for a stew of beef, onions and mushrooms in a pale ale stock flavoured with tomato puree and paprika that's adapted to be cooked in a microwave.

Ingredients:

1kg braising steak
50g plain flour
2 tsp mustard powder
1/2 tsp sea salt
2 tbsp oil
2 large onions, peeled and chopped
2 tbsp tomato purée
2 tbsp paprika
pinch of cayenne pepper
1 tsp dried thyme
600ml pale ale
100g button mushrooms

Method:

Slice the meat into 3cm cubes. Combine the flour, mustard and salt in a bowl, add beef and toss to coat. Place a browning dish in your microwave (1200W) and pre-heat on full power for 3 minutes. Add the oil and cook on full power for 30 seconds. Now add the beef, turning int quickly to brown all over. Cook on full power for 3 minutes more.

Transfer the meat to a microwave-safe casserole dish and add the onion, tomato purée, paprika, cayenne pepper, thyme and ale. Cover with clingfilm (plastic wrap), snip two steam holes in the top then transfer to your microwave (1200W). Cook on 50% (medium) power for 17 minutes then add the mushrooms.

Continue cooking on medium power for a further 7 minutes. Remove form the microwave and allow to stand for 5 minutes. Serve hot with mashed potatoes.
