Macedonian Souvlaki is a traditional North Macedonian recipe for a classic dish of cubed lamb threaded onto skewers with bay leaves and cherry tomatoes that are barbecued or grilled and served in pita breads with a yoghurt dressing. Although souvlaki is typically considered to be a Greek dish it is also commonly prepared in the Balkans, as this Macedonian version demonstrates.
Ingredients:
450g meat from lamb shoulder or leg, cubed
5 tsp dried oregano
5 bay leaves
5 cherry tomatoes
olive oil
salt and freshly-ground black pepper, to taste
4 Pita Breads, halved
lettuce, shredded
For the Dressing:
180ml plain yoghurt
1/2 onion, finely chopped
1/4 cucumber, finely diced
Method:
Season the cubed lamb with salt, black pepper and oregano then thread the lamb, bay leaves and cherry tomatoes onto 4 skewers that have previously been soaked in water for at least 30 minutes.
Brush the kebabs with oil then cook on a hot barbecue or under a hot grill, turning frequently, until done (about 15 minutes, depending on the desired level of done-ness).
Meanwhile, combine the yoghurt, onion and cucumber in a bowl.
Take a skewer and insert the meat and tomatoes into a pitta bread (discard the bay leaf). Top with the shredded lettuce and dressing. Serve immediately.
