M'Chuzi wa Nyama (Zanzibar-style Beef Curry) is a traditional Tanzanian recipe for a classic curried stew of beef steak and liver cooked in a spiced sauce and served with a range of relishes. This curry can be made either with beef stewing meat or, as is very common in Tanzania, with beet liver. It is typically served with a selection of six relishes that comprise fresh fruit, cucumber and mango chutney.
Ingredients:
100g onions, finely chopped
1 garlic clove, crushed
1 tsp salt
1 tsp ground turmeric
1/4 tsp hot chilli powder
2 tsp curry powder
4 tbsp oil or margarine
1kg beef stewing steak or beef liver, cut into 2cm cubes
500ml water
4 tbsp lemon juice
2 tbsp cornflour (cornstarch)
2 tbsp water
For the Relishes:
60g bananas, diced
100g onion slices, fried until crisp
100g mango chutney
75g shredded coconut
100g orange segments
100g cucumber, cut into 1cm dice
Method:
Heat the oil in a pan, add the onions, garlic, salt, turmeric, chilli powder and curry powder. Stir to combine and fry for about 5 minutes, or until the onion is soft but not coloured. Add the beef and fry for a few minutes (but do not allow to colour).
Pour in the water and lemon juice then bring to a simmer. Cover with a tight-fitting lid and cook for 60 minutes. Whisk together the cornflour and 2 tbsp water to a smooth slurry. Stir into the curry and cook for about 10 minutes or until the sauce has thickened.
Serve hot, accompanied by rice cooked in chicken or beef broth and the selection of relishes.
