Kouclas

Also spelled koukles, this is the centrepiece of the
Cholent Dafina recipe, a Moroccan Jewish dish for passover.
Ingredients:
100g breadcrumbs (or matzoh meal for Passover)
1 large yellow onion, chopped
3 large eggs
4 tbsp fresh
parsley , chopped
2 tbsp plain flour
salt, to taste
Method:
Combine all the ingredients in a bowl and mix thoroughly. Wrap the resultant mixture loosely in a piece of cheesecloth then tie securely.
Add to the centre of your stew and simmer for 1 hour, or until cooked through and firm. Serve as the centrepiece of your stew.
