Kitfo Leb Leb (Fried Beef with Spices) is a traditional Ethiopian recipe for a classic dish of freshly-minced (ground) steak that is very lightly fried in a blend of spiced butter and mitmita (hot chilli spice blend) before being served. Ingredients:
800g lean steak, freshly minced
100ml Niter Kebbeh
1 tbsp mitmita
wedges of green bell pepper, to garnish
Method:
Heat the niter kebbeh gently in a pan to melt then mix in the mitmita blend. Increase the heat to medium and when the niter kebbeh is hot crumble in the ground meat. Lightly fry for about 2 minutes (do not over-cook the beef) then turn into a bowl and stir well to mix.
Turn the mixture into a serving dish, garnish with a few wedges of green bell pepper and serve. Traditionally this is served with teff-based injera bread.
