Ahi Poke Bowl

Though poke is really Hawaiian dish, it's made its way to Kiribati where it's now a popular dish on the island.

Ingredients:

40g Edamame (raw soy beans)
1 tbsp light soy sauce
1/2 tsp granulated sugar (or to taste)
1 tbsp Sesame oil
splash of Rice wine vinegar
1/2 tsp Ginger, freshly grated
generous pinch of Toasted sesame seeds
250g Raw sushi-grade tuna or salmon
2 spring onions, finely chopped
1/2 Avocado, sliced
10 cubes of ripe mango

Method:

Combine the soy sauce, sugar, sesame oil and rice wine vinegar in a saucepan over low heat. Stir until the sugar has all dissolved.

Taste the sauce and adjust to your liking. Depending on your taste you may want to add more vinegar or sugar to balance the salt in the soy sauce. Once the sauce is to your liking set aside to cool completely

Stir the grated ginger into the cooled sauce then mix in your sashimi grade fish of choice and edamame

Garnish with toasted sesame seeds, mango pieces, sliced avocado and chopped spring onions.

If desired, you can serve on a bed of rice (glutinous would be best).
