Khalia (Georgian Spicy Beef Stew)

Ingredients:

675g boneless beef chuck steak, cut into 1cm cubes
3 tbsp olive oil
180ml beef stock, hot
3 onions, finely chopped
2 tsp tamarind concentrate
2½ tbsp tomato purée
1/2 tsp Hungarian hot paprika
1/4 tsp fenugreek seeds, ground
3/4 tsp coriander seeds, crushed
1 tsp dried tarragon, crumbled
salt, to taste
1½ tsp freshly-ground black pepper
3 garlic cloves, minced
3 tbsp coriander (cilantro) leaves, chopped
60ml walnut pieces, finely chopped
1 tbsp sugar (or honey)

Method:

Heat the oil in a large cast-iron skillet or heavy frying pan over medium heat. Add the beef, onions and garlic and fry, stirring continually, for about 12 minutes, or until golden brown.

Meanwhile, whisk together the beef stock with the tomato purée and the tamarind concentrate then set aside until all the tamarind concentrate has dissolved into the mixture (about 10 minutes). Add the beef to the onion mixture and fry for 3 minutes then stir in the beef stock mix. Bring to a boil, reduce to a low simmer then cover and simmer gently for 50 minutes, stirring occasionally. During the cooking process add stock or water, as needed, to ensure the beef does not dry out.

Add the herbs and seasonings then stir in the sugar and walnuts and continue simmering for 15 minutes more. Serve hot on a bed of rice.
