Kabab Kubideh (Grilled Minced Meat)

Kabab Kubideh (Grilled Minced Meat) is a traditional Iranian (Persian) recipe for a classic dish of minced meat mixed with onion and breadcrumbs and bound with egg that is formed around metal skewers and barbecued until cooked through. Ingredients:

450g minced (ground) beef or lamb
1 medium onion, grated
25g breadcrumbs or white flour
1 egg, lightly beaten
1 tsp ground turmeric
1 tsp sea salt
1/2 tsp freshly-ground black pepper
1 tbsp lemon juice

Method:

Place the grated onion in a cloth and wring out as much of the excess moisture as you can.

Combine all the ingredients in a bowl and mix thoroughly with your hands. Cover the bowl then set aside, at room temperature, for 2 hours. Transfer the refrigerator and chill for 2 hours.

Divide the meat into ten portions and press each portion around long metal skewers to produce evenly-shaped kebabs.

Place the skewers on a pre-heated charcoal barbecue and cook, turning constantly, for 2 minutes then cook on each side for a few minutes more, or until well browned and cooked through. Serve hot with rice.
