Island Fish Tea is a traditional Bahamian recipe for a classic soup of fish and fish trimmings flavoured with chilli, thyme and lime juice. The full recipe is presented here and I hope you enjoy this classic Bahamian version of: Island Fish Tea.

Ingredients:
1.4kg fish and fish trimmings, cut into pieces
1.5l water
1 Scotch Bonnet chilli
1 tsp thyme
generous squeeze of lime juice
2 onions, chopped
2 tomatoes, chopped
4 tbsp flat-leaf parsley, finely chopped
Method:
Combine all the ingredients in a pot and add just enough water to cover. Bring to a boil then reduce to a simmer and cook gently for about 60 minutes.
Take off the heat and strain the liquid off through a fine-meshed sieve. Divide the liquid between warmed soup bowls, garnish with cubed potatoes, fried fish pieces and chopped parsley, if desired and serve.
