Garlic Soup

This soup deserves to be one of the 'classic soups'. Don't worry, by the time it's cooked it's nowhere near as garlicky as it might seem at first.

Ingredients:

1 tbsp unsalted butter
1 tbsp olive oil
450g onions, coarsely chopped
1 bouquet garni (3 parsley stalks, 1 sprig thyme and 1 bayleaf wrapped in 1 green leek leaf and tied with string).
28 medium-sized garlic cloves, peeled
1l (4 cups) chicken stock (250ml [1 cup] kept back to thin the soup)
250ml (1 cup) whipping cream
cayenne pepper (optional) to taste
salt and freshly-ground black pepper to season

Method:

Heat a large pan on medium heat and add the oil and butter. Add the onion and garlic to this and cook until the onions are tender and golden brown in colour. Add three cups of chicken stock and the bouquet garni to the pan and bring to the boil. Then reduce the heat and simmer for fifteen minutes.

At this point remove the bouquet garni, transfer the mixture into a blender and purée. Return to the cleaned saucepan, heat up again and mix-in the cream. Simmer gently until heated through (if needed thin the soup with a little additional stock).

If desired add some cayenne pepper for an additional kick then serve immediately with crusty French bread.
