Plov S Mindalyom, Izyumom I Apelsinovoy Tsedroy (Fruit Pilaf)
Plov S Mindalyom, Izyumom I Apelsinovoy Tsedroy (Fruit Pilaf) is a traditional Georgian recipe for a classic mix of rice with carrots, almonds, sultanas and orange zest that's cooked in chicken stock . Ingredients:
4 tbsp butter
50g sugar
120g carrots, grated
45g slivered almonds
freshly-grated zest of 2 oranges
1 apple peeled and chopped
65g dried cherries or apricots
50g sultanas
1/4 tsp ground turmeric
210g long-grain rice
720ml chicken stock, boiling
salt, to taste
Method:
Melt the butter in a heavy-based 2l saucepan over medium-low heat. Add the sugar, apple and carrots, increase the heat to medium and stir fry for 2 minutes. Now stir in the almonds, orange zest, sultanas (golden raisins) and turmeric. Continue to stir fry for another 4 minutes before adding the rice. Keep cooking and stirring until the rice is thoroughly coated with the butter and begins to take on some colour (about 2 minutes).
Immediately pour in the boiling stock in a steady stream then bring the mixture to a boil and cook for 2 minutes. Add the salt, reduce the heat to very low then cover the pan tightly, reduce to a simmer and continue cooking until the rice is tender and all the liquid has been absorbed (about 20 minutes). Take off the heat and set aside to stand, covered, for 10 minutes.
After this time remove the lid and fluff the rice with a fork before transferring to a serving plate and bringing to the table.
