Frijoles Refritos (Refried Beans): A Mexican recipe for a dish or accompaniment of beans that are cooked and then fried with chorizo, onion, tomatoes and hot chillies in lard or vegetable fat before being finished with cheese.
Ingredients:
225g dried kidney beans or pinto beans
1 tsp salt
1 small chorizo sausage, skinned and diced
3 tbsp lard or vegetable fat
1 onion, chopped
3 medium tomatoes, blanched, peeled, de-seeded and chopped
2 small, hot, dried red chillies, crumbled
50g Monterey Jack or Cheddar cheese, grated
Method:
Pick over and wash the beans. Place in a large bowl, cover with water and set aside to soak over night. The following day, drain the peans then place in a saucepan with 1/2 tsp salt. Pour over just enough water to cover. Set over medium-high heat and bring to a boil. Reduce to a low simmer, cover the pan and cook for about 90 minutes, or until the beans are cooked through and tender.
Drain the beans, purée in a blender then set aside.
In the meantime, fry the chorizo in a small frying pan, stirring occasionally, for about 5 minutes. Using a slotted spoon, transfer the chorizo pieces to a kitchen towels to drain.
Melt the lard or fat in a large frying pan. Add the onion and fry until soft. Stir in the tomatoes, the remaining salt and the dried chillies. Bring to a simmer and cook, stirring frequently, for 5 minutes or until the mixture is pulpy.
Stir in the sausage along with the puréed beans and the cheese. Cook, stirring and turning frequently, for 10 minutes, or until the cheese has melted.
Turn the mixture into a warmed dish and serve immediately.
