This is the traditional way of serving Chile's national dish, Charquicán the following morning for breakfast. If there isn't enough Charquicán left over you can bulk it up using diced potatoes, diced carrots and peas, cooking for 15 minutes until everything is tender.
Ingredients:
4–6 ladles full of left over
Charquicán
4 eggs
oil for frying
chilli powder, salt, black pepper, to taste
Method:
Place a pan over medium heat. Once hot add the leftover Charquicán and a little water,. Bring to a simmer and cook for about 10 minutes, until heated through.
When the stew is hot, place a frying pan over medium heat. Add enough oil to baste and when the oil is hot crack in the eggs. Ladle the hot oil over the eggs and fry until the whites are cooked through.
To serve, divide the Charquicán between four plates. Top with an egg, season to taste with chilli powder, salt, black pepper and serve accompanied by crusty bread.
