It's likely that emigrating Brits introduced this dish into Australia during the 1950s and 1960s, but since then it has definitely become and Australian 'thing'. This is a very simple recipe, but a classic example of comfort food. Fried or baked sausages with carrots and peas in a gravy made from a blend of flour and curry powder.
Ingredients:
8 pork sausages (preferably spicy)
2 carrots, sliced
1 onion, sliced
1 tsp garlic paste
400ml water
1 tbsp curry powder eg
madras curry powder
2 tbsp cornflour (cornstarch)
80g (1/2 cup) peas (frozen are good)
cracked black pepper, to taste
Method:
Add half the oil to a tall-sided frying pan and use to fry the sausages until evenly browned all over (8 minutes). Remove from the pan, cut into chunks and set aside until needed.
Whilst the sausages are frying boil the carrots in lightly-salted water until just cooked (about 12-15 minutes). Drain in a colander and set aside.
Add the remaining oil to the pan (do not clean) over medium heat and use to fry the onions until they are starting to soften (about 3 minutes). Add the garlic and fry for 1 minute more.
Scatter over the curry powder and fry briefly then stir in the water. Bring to a boil and cook for 1 minute. Mix the cornflour (cornstarch) to a slurry with 4 tbsp water and add to the gravy. Stir to combine, return to a simmer and cook until thickened (about 3-4 minutes).
Add the carrots, peas and sausages to the curry gravy and continue cooking until everything is heated through (top up the water if needed). Turn into a warmed serving dish, garnish with cracked black pepper and serve. Typically this is served on a bed of mashed potatoes or rice.
