Çişlik is a traditional Turkmen (from Turkmenistan) recipe for a classic dish of cubed lamb marinated over night then grilled or barbecued with onion pieces. The full recipe is presented here and I hope you enjoy this classic Turkmen version of: Çişlik.

Ingredients:
500g lamb, cut into 3cm cubes
2 onions, sliced
1 tsp lemon juice
10g spring onions, chopped
20g tomatoes, sliced
20g cucumbers, sliced
1/2 lemon, sliced
1 tbsp vinegar
1 tbsp butter, melted
1/2 tsp black pepper
1 salt
Method:
Wash the lamb, dry and place in a large pan then add the salt, pepper, sliced onions, vinegar and 1 tsp lemon juice. Toss to combine then cover the bowl with clingfilm (plastic wrap) before refrigerating to marinade for at least 3 hours (preferably over night).
The following day, pre-heat your barbecue or grill then skewer the lamb on bamboo skewers (pre-soak these for 1 hour beforehand), ensuring you alternate the lamb pieces with onion slices. Brown the Çişlik on hot charcoals, turning frequently and cook for about 20 minutes, or until the lamb is evenly cooked through.
To serve, place the Çişlik on spits and pour melted butter over the top then garnish with the spring onions. Serve with slices of cucumber, tomatoes and lemon.
