Churrasco (Chilean Beef Hot Dogs)

This is a relative of Chilean completos but made with beef steak rather than hot dogs.

Ingredients:

4 hot dog buns/hoagie rolls
1 flank (or sirloin) steak (about 500g and 2cm thick)
1 tbsp Badia complete seasoning
diced tomatoes
diced onions
2 avocados
ketchup
mustard

Method:

Season the steak with the complete seasoning. Grill steak on a barbecue or in a ridged cast iron pan indoors at high heat for about 4 minutes on each, side or until medium rare. Transfer to a cutting board and let it rest for at least 5 minutes. Then, slice thinly against the grain.

Whilst the steak is cooking, chop your onions and tomatoes. Extract the flesh from the avocados and mash until smooth.

Slice your rolls open then layer onion and tomato in the base. Place the sliced steak on top then layer over the avocado.

Finish by drizzling the mustard and tomato ketchup over everything, creating an attractive pattern.
