Chili Beans

This is a classic Texan-style chili, made with mixed meats and plenty of chillies, but containing no beans (as is traditional for true Texas chilis).

Ingredients:

300g pinto beans
450g minced beef
1 onion, chopped
2 garlic cloves, chopped
2 tbsp olive oil
1 tbsp flat-leaf parsley, finely chopped
2 tbsp chilli powder
1/2 tsp ground cumin
420g tinned chopped tomatoes (undrained)
2 jalapeño chillies, finely chopped
salt and black pepper, to taste
1 tsp brown sugar
50g fresh coriander leaves, shredded

Method:

Place the beans in a large bowl, cover with water and set aside to soak over night. The following day, drain the beans, place in a large pan and cover with water. Bring to a boil, reduce to a simmer then cover and cook gently for about 90 minutes, or until the beans are tender.

Heat the oil in a large frying pan and use to cook the onions and garlic until soft and translucent (about 6 minutes). Set the onions aside and use the pan on high heat to brown the meat. Add the chilli powder and cumin to the meat as it's cooking then stir-in the reserved onions and garlic. Fry for about 1 minute then add-in the parsley and tomatoes. Stir to combine then add the chopped chillies and season to taste.

Now stir-in the beans and adjust the seasonings. Bring the mixture to a boil, reduce to a simmer and cook for about 10 minutes, or until everything is hot. Transfer to a serving bowl, garnish with the coriander leaves and serve with the rice.
