Chakalaka is a spicy Southern African vegetable relish that's served ubiquitously with just about any meal. It's the Southern African version of the West African Hot Pepper Sauce.

Ingredients:

1 large onion, finely diced
6 large tomatoes, finely chopped
2 green bell peppers, finely diced
4 large carrots, peeled and grated
450g can of baked beans (or haricot beans baked in tomato sauce)
4 tsp hot curry powder
2 hot chillies, very finely diced
1 tbsp Peri-peri sauce
150ml groundnut oil
1/2 tsp salt

Method:

Warm the oil in a pan then add the onions and green bell peppers. Fry until soft before adding the carrots, tomatoes, chillies and baked beans. Mix thoroughly and allow the mixture to simmer gently for 1 minute (stirring occasionally).

Towards the end of the cooking time use a broad spoon to squash the ingredients against the side of the pan so that the mixture becomes smooth. Add all the remaining ingredients and cook for a further 15 minutes. Serve warm.

The mixture will keep in the fridge for over a week.
