Cream together the oil, sugar and eggs until all the sugar has dissolved. Stir-in the mango and grated carrots then add all the dry ingredients and beat to combine. Turn the resulting batter into a greased and floured tube pan then transfer to an oven pre-heated to 170°C. Bake for about 60 minutes, until the top is golden brown and a skewer inserted into the centre of the cake emerges cleanly.
Allow to cool in the pan for 10 minutes then turn out onto a wire rack to cool completely before serving (the cake can be iced [frosted] if desired) [use a cream cheese icing].
