Cabbage Jambalaya: Classic American recipe (from Louisiana) for a jambalaya, a layered stew of cabbage, minced meat and rice in a tomato-based sauce.

Ingredients:

1 medium cabbage, shredded
1 large onion, finely chopped
1 green bell pepper, de-seeded and finely chopped
400ml passata (or tomato sauce)
230g minced beef
230g minced pork
480ml water
300g long-grain rice
2 tbsp vegetable oil

Method:

Put the oil in a baking dish and layer half the raw cabbage, rice, meats (mixed together), onions and pepper. Pour half the passata over the top then repeat with a second layer of the same ingredients. Pour the remaining passata and the water over the layers then season with salt and pepper.

Place in an oven pre-heated to 180°C (350°F/Gas Mark 4) and bake for an hour. Serve accompanied with Breads.
