Home-made Tomato Sauce

This is a key ingredient in many American, Australian and Caribbean recipes. But where this is not readily available commercially you can prepare your own. Indeed, I think the home-made version is vastly superior. This is the Australian version of tomato sauce.

Ingredients:

1 ½kg tomatoes, coarsely chopped
120ml white wine vinegar
3 tsp salt
100g caster sugar
1 garlic clove, sliced thinly
1 tsp fresh ginger, grated
½ tsp whole cloves (or ¼ tsp ground cloves)
½ tsp ground allspice
3 tsp freshly-ground black pepper
⅛ tsp cayenne pepper

Method:

Combine all the ingredients in a large saucepan and bring to the boil, stirring frequently. Once boiling reduce to a simmer and cook gently, partly covered, for 2-3 hours, stirring occasionally.

You are looking for a fairly thick sauce-like consistency. If the sauce looks to be too watery continue to simmer uncovered until it reaches the preferred consistency.

Strain half of the mixture through a coarse sieve into a bowl, and then the other half. Use the back of a spoon to push the sauce through the sieve and extract as much liquid as possible. Discard any left-over solids.

Alternatively, blend the cooked sauce in a food processor or chopper but keep in mind that any sauce prepared like this will be spicier with more of a kick.

Pour the hot mixture into a medium-sized sterilised bottle and seal. Allow to cool then store in your refrigerator until needed. It will keep like this for a few weeks.
