Ingredients:
500g ostrich fillets
2 red onions, cut into wedges
1 red bell pepper, cubed
1 yellow bell pepper, cubed
1 green bell pepper, cubed
salt, ground white pepper and cayenne pepper, to taste piri-piri sauce, to accompany
Method:
Soak your wooden or bamboo skewers in a bowl of water for at least 20 minutes before use (you will need 8). Pre-heat your barbecue.
Cube the ostrich meat and cut the onions and bell peppers into similarly-sized pieces.
Thread the meat and vegetables alternately onto the skewers and season to taste with salt, white pepper and cayenne pepper.
Place on your barbecue and cook, turning frequently, for about 20 minutes or until cooked through. Serve hot, accompanied by rice and piri-piri sauce.
