The origin of waffles is a hotly-debated issue in Europe. The Dutch insist that they represent one of their national dishes and the Belgians to the same. This site shows that waffles were known in England and were commonly made in Medieval times, as this recipe for Medieval waffres (waffles). Whatever, their true origins, one of the delights of walking the streets of Brussels on a winter day is the glorious aroma of freshly-cooking waffles emerging from the many waffle stalls. The following recipe is based on a classic Belgian method for preparing waffles.
Ingredients:
250g plain flour
1 tsp baking powder
pinch of salt
2 tbsp caster sugar
250ml milk
3 eggs, separated
90g butter, melted and cooled
1 tsp vanilla extract
Method:
Sift the flour, baking powder, salt and sugar into a large bowl. Lightly beat the egg yolks then mix into the flour mixture before adding the milk and vanilla extract. Stir to combine thoroughly then add the melted butter and stir in.
Meanwhile, add the egg whites to a clean bowl and beat until stiff and glossy. Gently fold the egg whites into the flour mixture with a metal spoon. Mix to combine well, but do not over-mix.
Brush a hot waffle iron with a little melted butter over medium heat. When hot place about 4 tbsp of the batter in it. Close the iron and cook the waffles for about 3 to 4 minutes, or until nicely golden brown. Remove from the iron and keep warm in an oven whilst you cook the remaining batter.
Serve the waffles warm with maple syrup, ice cream and mixed berries or a fruit coulis.
