Waffres (Waffles) is a traditional Medieval recipe for fried waffles/wafers (the end product is somewhere in the middle between the two), which demonstrates that these types of fritters were known in England during Medieval times. Take þe Wombe of A luce, & seþe here wyl, & do it on a morter, & tender cheese þer-to, grynde hem y-fere; þan take flowre an whyte of Eyroun & bete to-gedere, þen take Sugre an pouder of Gyngere, & do al to-gerderys, & loke þat þin Eyroun ben hote, & ley þer-on of þin paste, & þan make þin waffrys, & serue yn.



Originally this would have been a fish day item, as indicated by the presence of the womb of a pike (ie pike roe in the original version.) As a fish day recipe the yolks would have been omitted from the eggs, using whites only. If you like you could add 100g fish roe to the recipe below to attain something more like the Medieval fish day recipe. For a normal (meat) day, the recipe below will give you a good approximation of a Medieval wafer. These were very popular during the Medieval period, wafer sellers (called wafereres) would stand on street corners, making wafers for customers passing by using an iron form resembling our old-fashioned waffle iron.

Modern Redaction

Ingredients:

10 large eggs, beaten
700g flour
75g sugar
1 tbsp ginger
350g grated Cheddar cheese
½ tsp salt

Method:

Add the solid ingredients (except the cheese) to a bowl and mix together, lightly beat the eggs and add them to the flour mixture. Finally add the cheese and mix thoroughly. The resultant mixture should resemble a thick batter.

You can either use a waffle iron to make these or you can make them in a frying pan. Butter the pan, get it nice and hot and drop a ladle of the batter into the middle. Cook for about five minutes on a side then serve.
