Arroz com Camarão (Rice with Prawns) a Classic Brazilian recipe for a dish of cooked rice blended with a stew of prawns (shrimp) in a tomato and herb base.
Bring a pan of water to a boil, add the salt, coriander and chives then plunge in the prawns and cook for about 3 minutes, or until pink. Drain and peel as soon as they are sufficiently cool to be handled.
Combine the onion, oil, tomatoes and water in a pan. Bring to a simmer and cook for about 10 minutes, or until the tomatoes have begun to break down.
Pass the tomato mixture through a fine-meshed sieve to purée. Stir in the prawns then mix the prawn sauce with the cooked rice.
