Alas con mostaza (Mustard Chicken Wings) a Classic Mexican recipe for a dish of chicken wings that are fried to colour and finished in a tomato catsup base with sugar and pearl onions.
Cut off the tips from the chicken wings (discard these).
Heat the oil in a frying pan, add the chicken wings and fry over high heat until they begin to brown.
Now add the salt and the chopped shallot and fry for about 5 minutes, or until the shallots begin to colour.
In the meantime, combine the catsup, mustard, sugar and a pinch of salt in a bowl. Add this prepared sauce to the pan with the wings then stir in the peeled pearl onions and the soy sauce. Bring to a simmer and cook for about 20 minutes, or until the chicken wings are thoroughly cooked through and the sauce has reduced to a coating consistency.
