Admiral Sauce is a traditional British recipe for a classic sauce made from a drawn butter base with anchovies, shallots, capers and lemon zest and which is typically served with baked or steamed fish. Ingredients:
2 anchovies
4 shallots, chopped
1 tsp capers, chopped
1 tsp freshly-grated lemon zest
250ml drawn butter sauce
generous squeeze of lemon juice
1/2 tsp finely-chopped fresh parsley
salt and freshly-ground white pepper, to taste
Method:
Pound the anchovies to a paste then combine in a pan with the drawn butter sauce, shallots, capers and lemon zest. Bring the mixture to a simmer, add the parsley and lemon juice then season to taste and serve.
Typically this is used as an accompaniment to baked or steamed fish.
